    To hold is the modern term for quality-enhancing holding. At peak times, during the a la carte service, short roasts are ‘parked’ in the Holdomat to equalise the temperature and evenly distribute the juices. The guest receives a wonderfully even flavour experience. The application can also be used for pieces of meat containing connective tissue, under controlled temperature, overnight.     The Holdomat is a professional holding device that is available in different versions. The holding appliances impress with an intelligent, absolutely even heating system, which keeps different dishes warm or cooks them simultaneously on the different shelf levels.

    The optional core temperature probe allows the desired temperature to be set with an accuracy of +/- 1 degree Celsius. The moisture content can also be checked thanks to the smart chimney function. All models have a clear and bright OLED display. The Salvis Holdomat is easy to transport thanks to its fold-out carrying handles, and several keep-warm appliances can also be stacked on top of each other.

    Precise control

    With a temperature accuracy of +/- 1 °C and thanks to its perfect humidity control, all meat productions are guided safely through the process. The U-shaped heating elements ensure uniformity right down to the last corner.

    Flexible use

    The applications of tempering and keeping warm are manifold. Baked and deep-fried food retains its crispiness, meat becomes more tender and scrambled eggs for breakfast stay juicy. Creative cooks also ferment, infuse and dehydrate.

    Mobile on the move

    For catering, the Holdomats can also maintain the temperature for short periods without a power supply. Thanks to the good insulation, the temperature remains stable. For the final serving temperature, the 230V connection at the destination makes it easy to find the necessary power supply.
