Salvis banquet system of superlatives
For the 21st anniversary of the Durban International Convention Centre in South Africa, the order was completed with 50 (!) 20 x GN 1/1 Combi-Steamer Salvis CucinaEVO.
This makes it the largest gastronomic institution on the African continent where 7000 meals can be banqueted at once. The goal was 10 minutes to serve all guests. The dishes are served out of 16 satellite kitchens, each equipped with 3x Combi-Steamer Salvis CucinaEVO GN 20xGN 1/1. The equipment includes 100 plate rack trolleys à 80 plates with 80mm spacing to enable a extraordinary presentation on the plates. In the production kitchen 4 additional Salvis CucinaEVO 20xGN11 QT are doing hard work. The Salvis technicians and our partner Culinary Equipment Company ensured a smooth installation process in Durban. The training of the 45 chefs on site was carried out in 3 x 3 days by the Salvis training chefs. The ISO 9001 certified kitchen meets all hygiene standards of a large European kitchen. All kitchens are air-conditioned and the "plating rooms" have food service conveyor belts to prepare the chilled food. HACCP is taken very seriously here. In order to save the HACCP data and to load cooking programs, a Salvis smartweb system was installed, which enables data exchange from the Combi-Steamers to the chef's office.
The Combi-Steamer Salvis CucinaEVO are easy to operate via the high-resolution touch screen. The perfectly elaborated vitalisation programmes prepare the dishes in à la carte quality to the desired temperature. "Above all, the easy-to-understand pictogram-guided control system makes handling in the kitchen easy," says Executive Chef John Moatshe. The most important cooking processes are called up via favourites. Preheating and AQA automatic quantity adjustment are the basis for consistent quality, whether for 50, 100 or 1000 people.
